Coffee first arrived in Mexico as early 1785, but only gained widespread popularity amongst farmers in the 1970s when the government started investing in the industry. Unfortunately the support did not last long and the Mexican Coffee Institute collapsed in 1989, leading to a drop in both quality and quantity of coffee produced.
However, some producers in the face of adversity came together and formed collectives to strengthen and protect their livelihoods and continued to grow and deliver good coffee. The main growing regions are Chiapas, Oaxaca, and Veracruz.
Our coffee this month comes from the Chiapas region, located in the southern region of the country bordering Guatemala. The mountainous highlands provides the right altitude, as well as rich volcanic soil to allow for the production of good coffee.
In this washed lot, we get notes of brown sugar and chocolate, with a crisp juicy mouthfeel, all in a light-medium body cup of coffee.
