Considered by many as the birthplace of coffee, the coffee from Ethiopia is well known for producing exceptional cups of coffee, with each region tasting different from one another. Some of the coffee growing regions in Ethiopia includes Harrar, Yirgacheffe, and Sidamo, as well as Limu and Jima.
This time, we have decided to feature coffee from the Guji Wubanchi station located in Mesina, which borders the renowned Yirgacheffe district. The region’s high altitude, consistent rainfall, fertile soil, and rich local expertise all contribute to the exceptional quality of the coffee. Furthermore, this lot of coffee had undergone a unique 'Supernatural' processing method in contrast to the usual natural process.
In traditional Ethiopian natural processing, cherries are dried in a thin layer on raised beds, exposed to sunlight. The ‘Supernatural’ method, however, involves drying cherries in a thick layer inside a semi-permeable box, restricting sunlight while allowing airflow. This extends the drying time and encourages natural fermentation of the sugars in the cherries, resulting in a cup that has highly pronounced flavours.
Expect floral and berry notes such as blackberries that is complemented with a sweet citrus flavour of orange, finishing with chocolate, in an intensely sweet cup with a long aftertaste.
