Colombia is one of the largest producers of coffee in the world, just behind Brazil & Vietnam. Not only does the country have optimal conditions for coffee cultivation, farmers in Colombia also have very good farm practices, largely due to efforts of the Federación Nacional de Cafeteros (FNC, an organisation that defends the interests of coffee producers in Colombia).
This month, we are featuring coffee from the highlands of Bruselas, in the Huila region. Las Margaritas, named after the large amount of daisies growing around the farm, was established in 1990 and grows high quality cultivars such as Colombia, Pink Bourbon, Geisha, Sidra and Wush Wush.
Grown at 1,800 MASL, this month’s coffee is the Sidra varietal, prized for its natural sweetness, floral notes, and complex flavour profile. To bring out these characteristics, the coffee is processed through a carefully controlled method: 36 hours of oxidation, followed by washing and an extended 80-hour anaerobic fermentation to deepen flavour development. A final wash then stops the fermentation process, helping preserve consistency and ensuring the beans reach you at their best quality.
In the cup, expect vibrant notes of stone fruit—particularly peach—alongside green apple, white grape, and a subtle hint of spice on the finish. The profile is exceptionally sweet, supported by a silky, velvety body that carries through to a clean finish.
