Colombia is one of the largest producers of coffee in the world, just behind Brazil & Vietnam. Not only does the country have optimal conditions for coffee cultivation, farmers in Colombia also have very good farm practices, largely due to efforts of the Federación Nacional de Cafeteros (FNC, an organisation that defends the interests of coffee producers in Colombia).
This month, we are featuring coffee from the highlands of Chinchiná, in the Caldas region. Finca El Renecar is located at an altitude of 1700masl, and grows several varieties such as SL28, Typica, and Pink Bourbon. Among its prized varieties, Pink Bourbon stands out — a rare hybrid known for its refined sweetness, vibrant acidity and naturally elegant fruit notes.
This lot was processed through a slow, carefully managed washed co-fermentation. A natural culture of friendly microbes is first nurtured, then enriched with fresh mangoes and panela to bring out gentle sweetness and tropical character. The coffee is then fermented with this mango culture for 150 hours, allowing the flavours to develop fully and naturally.
We found notes of stonefruits, particularly mango in the aroma, as well as notes of passionfruit and raspberry in the cup. A well balanced cup of coffee with an intense honey-like sweetness and lingering aftertaste that highlights the farm's aim to express the profile of each varieties with a touch of microbiology given by the natural fruits in the region.

SELF PICKUP
Self pickup orders are collated once weekly on Fridays (place your order by Thursdays), and will be ready for pickup on Saturdays.
Orders on Fridays will be processed the following week.
